Lunchtime Yummies

I wanted to share a quick photo of my lunch because it was really that delicious! I cooked the sweet potato in the microwave last night and reheated it for lunch. I made a modified version of the farro salad last night as well and it’s exceeded my expectations. This was one of the recipes I’ve been looking at making for a while now and I think it’s going to become a regular for sure. I’d recommend trying it!

Mediterranean Farro Salad and Sweet Potato for Lunch

One of the cool things about bringing my lunch into work is that I’ve had random conversations with people who were interested in what I’d made because they’d never heard of certain things before. Like this lady yesterday was sort of turned off at the idea of eating a carrot soup but after I started explaining how I made it, I think she was more accepting of the idea. With that, I have to say that my sister has previously claimed it to be her “favorite soup ever” and the rest of my family has given it the thumbs up as well.

Try new things, it could surprise you how much you end up enjoying it.
