Valentine’s Day Pretzel Rolo Bites

Ingredients

Scale
  • 19.75 oz bag of Hershey’s Rolo’s (approx 91 candies)
  • 1 12 oz bag of Pretzel Squares
  • 12 oz melting chocolate wafers (I used 6 oz of light pink and 6 oz of bright white to achieve a very light pink color)
  • Red, white, and pink nonpareil sprinkles (Approx. 1-2 TBSP)

Instructions

  1. 1. Preheat oven to 250°F.
  2. 2. While the oven is preheating, lay out pretzels on a large baking sheet and then place an unwrapped Rolo in the center of each pretzel. Once heated, place tray in the oven for 2-3 minutes. You don’t want the Rolo’s to actually start melting you just want them to be soft enough to press it into a sandwich.
  3. 3. Remove the tray from the oven and quickly press a second pretzel over top of each Rolo to create a sandwich.
  4. 4. Place the baking tray on a clean shelf in the freezer for at least 10-15 minutes until the chocolate has completely set. If you decide to put it in the fridge, allow extra time for cooling.
  5. 5. Once the chocolates have cooled, start to melt the chocolate wafers by following the package directions.
  6. 6. Dip half the Rolo sandwiches diagonally into the melted chocolate and remove quickly to place onto a strip of wax or parchment paper to cool. For every 15 or so dipped sandwiches, sprinkle nonpareils over the melted chocolate. If you wait too long, they won’t stick and you’ll have to re-dip, so don’t forget this step!
  7. 7. Let sit until chocolate has completely cooled before serving or package in an airtight container for up to a week.
