Fresh Tomato-Basil Pasta

Description

A healthy-fresh summer pasta.


Ingredients

Scale
  • 8 oz long, thin pasta
  • 1 medium-large tomato, diced
  • A handful of fresh basil leaves – chopped or sliced into ribbons

Dressing

  • 2 Tbsp extra-virgin olive oil
  • 2 Tbsp freshly squeezed lemon juice
  • 1/2 tsp Himalayan pink salt
  • 1 clove of garlic – crushed (or 1/8 tsp of garlic powder)

Instructions

  1. Prepare the pasta according to package directions.
  2. Mix the olive oil, lemon juice, salt, and garlic to make the dressing and then combine with the tomatoes and basil.
  3. After the pasta is done cooking, drain, and run under cool water if you want it to be like a salad instead of warm pasta. Either way, it’s delicious!
  4. Gently mix the tomatoes and dressing into the pasta and serve immediately.

Notes

  • The fresh ingredients in this recipe are what gives it the extra burst of flavor so use fresh lemon and basil when available.
  • If you need cheese, sprinkle a small amount of Parmesan on top or slice some fresh mozzarella to make it into the perfect Caprese pasta salad.
