The Perfect Valentines Treat

The last week has been a mish-mash of events, emotions and goings on but I’m really excited to share my favorite Valentine’s treat with you today.

But first a quick review of this week. This last weekend was my father-in-law’s birthday and we had a special party down at Maggiano’s in DC. Brady and I are used to being asked to sing for basically any parties we go to so we prepared a few special little songs to sing for the party.

On Monday I felt exhausted once I got home from work but Brady and I still went out for a walk and tried out a new trail near us.

Once we got home, I wanted to go to bed but felt it might be a tad too early for that so I baked up some granola, fresh homemade multigrain bread, and boiled some eggs. It all made for a delicious breakfast the next morning with my chai tea latte made with almond milk. Shadow wanted some too.

This is the recipe I used for the Chai tea but I used a Stash Chai Spice (decaf) tea bag instead of making the tea from the spices listed in the recipe because it’s a lot quicker to pull together. I used almond milk instead of regular milk and I feel like the recipe could do with a bit less sugar, but sweetener is obviously a personal preference.

Monday-Wednesday this we had uncharacteristic warm and beautiful spring weather! Lisa and I met up for a walk around Centennial on Tuesday afternoon to take advantage of the heavenly 70 degree weather. We didn’t get the usual magnificent sunset because of the hazy clouds, but the temperatures were worth it.

So now for the “Perfect Valentines Treat Recipe”! I’m excited to share this because this stuff is serious addicting. I know it goes against the eating less sugar goal but these really are the perfect treats to package up and gift to friends and family and/or to take along to a V-day party!

Valentine's Pretzel Treats

I’ve been making these the last couple years for our annual family Christmas party and I decided that I was going to make them for a Super Bowl party we went to last week by doing a Valentine’s Day edition. Everyone that’s tried them has undoubtedly said that these pretzel bites are so amazing and addicting.

They’re super simple to make and the only thing that really takes much time is the unwrapping of all the rolos but I was still able to lay out all the pretzels and Rolo’s before the oven finished pre-heating.

Melting Chocolate without a double boiler

I don’t have a double boiler so I just use a small glass bowl over a pot of simmering water. You have to melt the chocolate in a way that doesn’t allow water to get in because even a tiny bit of water can ruin a batch of melting chocolate.

The key to making the dipping of the chocolate easier is to make sure the Rolo’s are completely cooled before you start to dip them or else the darker chocolate will bleed into your pretty colored chocolate.

Valentine’s Day Pretzel Rolo Bites

Ingredients

Scale
  • 19.75 oz bag of Hershey’s Rolo’s (approx 91 candies)
  • 1 12 oz bag of Pretzel Squares
  • 12 oz melting chocolate wafers (I used 6 oz of light pink and 6 oz of bright white to achieve a very light pink color)
  • Red, white, and pink nonpareil sprinkles (Approx. 1-2 TBSP)

Instructions

  1. 1. Preheat oven to 250ยฐF.
  2. 2. While the oven is preheating, lay out pretzels on a large baking sheet and then place an unwrapped Rolo in the center of each pretzel. Once heated, place tray in the oven for 2-3 minutes. You don’t want the Rolo’s to actually start melting you just want them to be soft enough to press it into a sandwich.
  3. 3. Remove the tray from the oven and quickly press a second pretzel over top of each Rolo to create a sandwich.
  4. 4. Place the baking tray on a clean shelf in the freezer for at least 10-15 minutes until the chocolate has completely set. If you decide to put it in the fridge, allow extra time for cooling.
  5. 5. Once the chocolates have cooled, start to melt the chocolate wafers by following the package directions.
  6. 6. Dip half the Rolo sandwiches diagonally into the melted chocolate and remove quickly to place onto a strip of wax or parchment paper to cool. For every 15 or so dipped sandwiches, sprinkle nonpareils over the melted chocolate. If you wait too long, they won’t stick and you’ll have to re-dip, so don’t forget this step!
  7. 7. Let sit until chocolate has completely cooled before serving or package in an airtight container for up to a week.
